A great place to start is 1 pound for each person. This gives everyone about 10 ounces of cooked turkey!

We will have frozen turkeys available after Thanksgiving, but we will not stock any more fresh turkeys. We also sell and encourage pre-orders on the following: duck, beef rib roast, lamb, spiral hams, and salmon.

A Fresh Turkey has never been at a temperature below 26° F since turkey meat begins to freeze at that temperature. Fresh turkeys are stored below 38-40° for optimum food safety. A Frozen turkey has been cooled to 0°. Most frozen turkeys have been “flash frozen,” which means the turkey was quickly taken to a frozen state to ensure optimum freshness when thawed.

The recommended oven temperature for cooking a turkey is 325°F (165°C). This temperature allows the turkey to cook evenly and thoroughly while also developing a beautifully browned skin. Cooking at this temperature is generally safe and produces delicious results.
Here are some key temperature guidelines for cooking a turkey:
Internal Temperature of the Turkey: The turkey should reach a minimum internal temperature of 165°F (74°C) in the thickest part of the thigh. It's important to use a meat thermometer to check the temperature. The breast meat can be slightly lower, at 160°F (71°C), but the thigh temperature is the most critical for safety.
Roasting Time: Typically, you can estimate about 15-20 minutes of cooking time per pound of turkey at 325°F. However, it's crucial to rely on the meat thermometer to determine when your turkey is fully cooked rather than relying solely on time estimates.
By cooking your turkey at 325°F and monitoring the internal temperature, you'll ensure that it's safe to eat and deliciously tender and moist. -

Turkeys will be good at refrigerated temps for up to 14 days. Turkeys come to us shell frozen, meaning they were brought close to frozen temperatures to allow for optimal storage.

We will have turkey breast ready to go all of the time and we will be cutting for the case. If you need something specific, thighs, hindquarters, spatchcock, or deboned, please fill out a Hold Order Form.

GAP defines animal welfare as 3 overlapping components that together with good management and genetics, contribute to good farm animal welfare:
Health & Productivity – raising animals so that they’re healthy and productive with good quality feed and water, shelter, and free from disease, illness and injury (but treating any animals that get sick).
Natural Living – raising animals in environments that allow them to express their natural behaviors effectively – both indoors and outdoors
Emotional Well Being – raising animals in environments that provide them the ability to be inquisitive, happy and playful and minimize boredom, frustration, fear, stress and pain, as much as possible.
By defining animal welfare, this helps us to identify and improve farming and ranching systems and practices. We then translate these systems into standards for each species under our GAP 5-Step® Animal Welfare Rating program.
